3tbsp soft brown sugar
2tbsp soy sauce
1tbsp tomato puree
150ml pineapple juice
1 1/2 tsp cornflour
Combine vinegar, sugar, soy sauce and tomato puree in a bolw. Add 75ml of water to the pineapple juice and stir into the sauce.
Heat 1tsp of oil in a wok and stir fry 4 diced chicken breasts for 1-2 minutes. Set meat aside.
Add 1tsp of oil to wok and stir fry your choice of vegetables.
Return meat to wok and add sauce. Bring to the boil, reduce heat and simmer for 5 mins. Stir in cornflour blended with 2tbsp water. Simmer until mixture thickens and heat through for 1min.
Serve with rice or noodles.
This is delicious but I haven't made it for a while and while I'm pretty sure the quantities for the sauce are for four, it may only be for two. What do do is make it up as I've given it and if it looks like a pathetic amount for four , just double it up. Hope you enjoy it. x
