Would I be able to transfer my insurance policy on to a new car, yet still drive the old one under the "driving other vehicles with 3rd party" entitlement? Or would I still have to hold an insurance policy for the old car?

It depends on the terms of your insurance policy. Mine is for any car that I have permssion to drive in addition to my own.

You will find that 'driving other vehicles' applies only to vehicles owned and insured by somebody else.

The vehicle MUST be insured in its own right.

It would be impossible to tax the vehicle without producing a valid insurance certificate for that named vehicle in any case.
