I come home exhausted from work. Any ideas for quick and easy dinners would be appreciated. Nothing too fattening please. I am running out of ideas and need a change.
My favourite is to add strips of chicken breast, chopped tomatoes & onion to a frying pan. When fried off add a mug of chicken stock, a squirt of tomato puree and a dash of light soy sauce.Throw in some herbs. Simmer [add cornflour to thicken if needed] while you boil up some pasta. Mix the two together. Takes less than 15 minutes on a good day. Oh, and if you fancy something spicy, just add chilli powder instead of herbs.
I suggest that you buy a Nigel Slater cookbook. Of all them the one I use the most is Real Food Fast (350 recipes ready-to-eat in 30 minutes) Favourite recipies from it include pork steaks with fennel, chicken with orange and black olives, mozzarella chicken with pestol gravy.
Its in Penguin and is �7.99 but has no pictures - some people can't bear cookbooks with no pictures. All his other books are good too but I think this is the one most likely to hit the spot for you.
Here are the ingredients for one person...
Spicy Noodles
Throw a square of Changs noodles in 3 cups of water (really the amount of water doesn't matter - it'll be a soup or a stew!)
Then throw a heaped tsp of vege stock, tofu (or any other protein), 3/4 tsp chilli flakes (less if you don't like it too hot), a tsp of soy sauce.
Let it all boil til the noodles are cooked then throw in 1 tbsp nutty peanut butter and some frozen peas. When the peanut butter has melted and the peas are cooked. Whack it in a bowl. I reckon this only takes me 7 mins all up and its my favourite meal to this day!!
