Changing a cake recipe

Hi can someone advise me. I am just about to make a date and banana loaf but didn't realise it had pecan nuts in the recipe (husband allergic to nuts). Can I replace the nuts with something like desiccated coconut?

Hi Athley just omit and forget about them I find when nuts are added to a recipe it is for crunchiness and leaving them out wont be detrimental to your recipe.Add coconut if you wish thats what cookings about experimenting.

Thanks Pea Pod. I think I will leave them out as you suggested. You never know what's going to happen when you alter cake recipes its a bit of a science thingy. Will let you know in a couple of hours if it looks OK.

Good thing about cakes coming out a bit dodgy you can always cover in hot custard or some cream and rename it.

The cake is cooked. It did take longer than the 1 hour 15 mins recommended but I covered the top with foil and kept an eye on it. It looks really nice. Have to wait for it to cool before tasting though.

No problem! Bit of butter on it?
It might depend on which sort of allergy your husband has.
