Meanwhile, dont worry, if you are not used to Goose fat roast potatoes you will probably find them vile as I did when I had a go one year.
Stick to good old lard, easy to obtain and cheap.
Not that I have anything against Nigella by the way, far from it.
I bought a tin in Sainsbury's, Epsom tonight, it was in the special selection bit but there was a big space - the Nigella effect is working.
I find half groundnut oil/ half goose or duck fat makes for crispy, tasty roasties.
Supermarkets are currently ripping people off on goose fat as it's the new 'in' thing (or fashionable food, lol). �3 for 330ml in sainburys and �2.50 for 200ml in tesco are both rip offs. Remember, it's just fat! Labelling it as 'finest' is ridiculous to say the least.
You can buy a whole duck for about �6 and you get nearly a pint of fat off that (score the skin and suspend above a roasting tray. Filter the debris and fridge the fat. It can be reused a couple of times this way). You also get to eat the meat and not just the fat.
Be wise, dont get fleeced this christmas :-)
