I've got a small tin of this and wondered what to make with it... any suggestions?
I was either going to make a curry or just use it to cook coconut rice or even coconut rice pudding.
Would you prefer to have it in rice or rice pudding? Sorry, but I hate having to decide!!!!

The Tom Collins is a cocktail and a variation on a Gin Sour. It is made of:
two parts gin
one part freshly squeezed lemon juice
drizzle of sugar spirit
chilled soda water to taste
sprig of fresh mint
Mix the first three ingredients in a tall glass with ice, then top up with soda water and garnish with mint.
Nowadays, commercial "sweet and sour" is often used as a replacement for the sugar and lemon juice.
Various versions replace the gin and rename the drink:
Brandy Collins (Brandy)
Jack Collins (Applejack)
John Collins (Bourbon)
Mike Collins (Irish whiskey)
Pedro Collins (Rum), also Rum Collins
Sandy (or Jock) Collins (Scotch)
Comrade Collins (Vodka), also Vodka Collins
Jos� Collins (Tequila)

Get some thai curry paste (at an asian supermarket or english one if you dont mind paying double), fry a tablespoon till fragrant then add the cream that's risen to the top of the can. Then add chicken, veg etc and the rest of the coconut milk. Season with salt, light brown (or palm) sugar and fish sauce if you have it.
When the chicken's cooked you've got yourself a thai curry that cost about a quid. Adding sweet & sour vegetables/fruits is a good bet too. Tinned pineapple, bamboo shoots, mango etc
