When do I restrict the light to turn the foliage red

There is quite a complicated series of light requirements to do this efficiently but as I understand it you start decreasing it from the end of august, but quite slowly and progressively. We tried to do it at the garden centre I advised for a while, but with very patchy results. Might be best left to those with computer controlled blinds, but good luck.
