I'm following a lactose free diet. Will using lactose free milk affect the overall result of cooking? I mean things like sauces, scones etc.

They won't taste the same but I used to cook a lot with lactose free products when I had to go lactose free for a while.

The best way is to experiment using similar amounts then adjust accordingly to taste.

Experimenting with different herbs and spices and such is also worthwhile to help up the flavour content.
