our grandaughters rabbit died yesterday,can we cook it and eat it,or will we be open to catching any disease

Also if it was sneezing just before it died it might have had rabbit flu - if so there will be a ten mile exclusion zone round your house and all morons within a 100 mile radius will need to be chemically castrated.
when I was a little girl we were served rabbit that my uncle had poached somewhere. But mother told us that it was the girl down the roads bunny that had died and we were going to have it for dinner.
Little brother was too young to understand but me - I cried and cried and cried and was physically sick without ever tasting a tiny bit of the poor bunny rabbit.
Nearly 40 years later I still can't eat rabbit.
But I am sure that it will taste fine, you enjoy the bunny rabbit and ignore the cries from your grandaughter and the fact that she will hate you forever.
