decorative glass jar filled with fruit

Hi, I have a really nice glass jar that I would like to fill with fruit and put on display. I wonder if anyone knows what to use to preserve the fruit? I know you can buy decorative glass jars already filled with fruit for display, but these are usually quite expensive. I had thought of either using some sort of cooking oil, vinegar or perhaps sugar syrup, but am not sure what the best thing is to use to avoid the fruit from rotting etc. All replies gratefully received.

Pickled Peaches with Savory
4 peaches, firm not soft
Brine (to float an egg)
1/2 tsp. Salt
Vinegar to cover
4 sprigs fresh savory
Immerse peaches in boiling water for 3 minutes. Plunge into cold water. Slip off skins. Cut peaches in half, removing pits. Cover with brine and leave at room temperature over night. Drain thoroughly. Place peach halves in a jar. Add salt, vinegar to cover and savory sprigs. Cover. Leave to mellow for 4 -6 weeks.
Brine is water with enough salt mixed in it to float a raw egg.
