at the beginning of 2000 there was a documentary about the life of a 1000 yr old oak tree, from sapling to giant oak, on tv. It was narrated by tom baker. Does anyone know what it was called and if its available in the shops?

I think it was an episode of "The Natural World" called The Millennium Oak, shown on 30 Dec 1999.

As for availability, I would think it highly unlikely - maybe Dr Who fans might be interested, but I can't imagine it would be a money-spinner - although there's plenty of other cr*p out there so you never know!
