I recently read a 'penguin classic' in GK Chesterton's
'The man who was Thursday' which I absolutely loved.
Does anyone have any recommendations of other penguin classics or any other books with this same type of great prose and wit?

You could try reading Chesterton's Father Brown stories (though i'm not sure if they are available as Penguin Classics). They are a sly riposte to the ultra-rationalist, Sherlock Holmes type detective story written with the same charm and wit that characterises all of his writing.
