Try a potato omelet. I make one every couple of weeks to clear out the fridge! Precook spuds, cut up small. Fry bacon, onions and anything else you have laying in fridge (toms, peppers etc.) Use large flattish pan with oven proof handle - chuck everything in, season well and cover with several beaten eggs. Cook for a few minutes without stirring - bit like an omelet then chuck in hottish oven for 5 - 10 minutes and Voila - perfect supper dish.
