Red leicester Cheese

If Red Leicester wasn't dyed red - what type of cheese would it be? Cheddar?

I guess it would just be Leicester cheese in much the same way you get coloured cheddar (the orangy stuff) and cheddar or white cheddar.
Although arguably similar, Leicester isn't cheddar.

isnt it supposed to come from Leicester and taste different to cheddar?

Cheddar in relation to cheese has two contexts:

made in Cheddar (Somerset) and the region, and made by cheddaring - a process. 'Real' cheddar is both.

Leicester I think omits the final cheddaring stage, as it is moister than cheddar. But yes, very similar.
