I am looking for CDs of purely piano jazz, nothing else (no singing or other instruments), from either Poland, France or Germany. Does such a thing exist and if so would anyone know of any? Thanks.

Try Michel Petrucciani (France)
Axel Zwingenberger (Germany)

Give me time, I'll come up with some more. Zwingenberger is a boogie specialist.
Does the pianist have to be totally unaccompanied?

It's difficult to find recordings of this sort. Most pianists record with a small rhythm section, usually bass and guitar, or bass and drums. A trio, in other words. I can give you lots of suggestions for trios. Let me know.
