When the battery in a mobile phone needs charging, why can't it just be taken out and replaced with a fully charged battery, as in some digital cameras?

You can buy a replacement battery and do exactly that using a desktop charger. There are many available now where the charger holds both your mobile phone and your spare battery for charging at the same time.

It depends what phone you have as to whether there is a dual charger available.
