Fois Gras IS the goose/duck's liver, it literally means 'Fat Liver'. A pate of fois gras can be made using this, but it's more often served simply sliced and cooked. Duck pate will be made using duck meat, and normally liver (though not necessarily liver from a fois gras duck, or quite possibly not duck liver at all!).
