I'm not sure of the origin of the word "hookah", meaning the water-filtered pipe that most of us associate with North Africa and the Middle East; in all the North African & Middle Eastern countries I've been to it's called a "sheesha" or a "narghila" (spelling may vary because it's a transliteration into the Latin alphabet).
