Adhesive for a new boat tiller

I've been asked to make a new tiller for a friends boat and am thinking of using American Cherry to match the boats internal and external finish. I would like to sandwich a lighter wood in the middle and want to know the best adhesive to use for such a project as I wish the finished article to have a reasonably long life.

The only adhesives I would trust would be Cascamite or animal glue If they are still available, Cascamite comes tinned in powder form to be mixed into a smooth paste with water. It's so long since I used animal glue that I can't remember how it comes.
Cascamite is waterproof when dry. Some animal glues aren't. There's also a more modern resin equivalent to Cascamite called Extramite.

Pretty sure both of those adhesives are available from Champions Timber, Or even someone like Screwfix Direct .. I, myself would use a Polyurethane Based Glue like GORILLA GLUE. They do waterproof & normal ... Hope this helps Sidney 1664
