This is a variation of our favorite...

MAYONNAISE CHOCOLATE CAKE

2 c. flour
1 c. sugar
2 tsp. baking soda
4 tbsp. cocoa
1/4 tsp. salt
1 c. water
1 c. mayonnaise
1 tbsp. vanilla

Sift dry ingredients into a large bowl. Add the water and beat 1 minute. Add the mayonnaise and beat 1 minute. Add the vanilla and beat 1 minute.
Pour into a greased and floured pan, 13 x 9 inch square for a very high cake. Sprinkle with chopped nuts and chocolate bits for a dandy frosting. Bake at 350 degrees (F) for 35-40 minutes.

Addendum:

If you need a larger cake, don't double the recipe, but, rather, make two or more cakes.

We like to add about 1 teaspoon of red food coloring... it makes it a deep red color. In other recipes it's known as Red Velvet Cake. It stays nice and moist for a long time (if it lasts very long!)...
Whisky Cake ??? just a bit different.
CAKE - 6oz marg, 6oz sugar, 3 eggs, 6oz SR flour
one tablespoon coffee dissolved
COFFEE SYRUP - 8 oz sugar, 1/2 pint water, 2 -3 tablespoons whisky, 3 tablespoons instant coffee.
Make cake as normal i.e. cream butter sugar add eggs ,flour, dissolve coffee in a small amount of water and add to cake mix
SYRUP - in pan dissolve water & sugar, try not to let it boil, remove from heat add coffee & whisky
stir until all is dissolved then cool.
When cake is cool, stand it in a deep serving dish pierce all over and drizzle syrup on to the cake.
Decorate with thick cream and walnuts.
this is very moist cake and deeeeeeeeelicious.
