Smoked Salmon Taglietelle with Parmesan Cream

INGREDIENTS
� 350g/12oz tagliatelle pasta
� 300ml/ � pint double cream
� 1 tbsp olive oil
� 8 thin slices pancetta (Italian streaky bacon), cut into thin pieces
� 6 tbsp freshly grated Parmesan
� 175g/ 6oz smoked salmon, shredded
� Maldon sea salt and freshly ground black pepper
METHOD
� Heat oil in frying pan. Tip pancetta pieces into the pan and saut� for a few minutes until crisp and sizzling. Drain on kitchen paper.
� Pour the cream into a saucepan and boil for 1 minute until thickening, stir in the Parmesan and season with black pepper.
� Drain the pasta and toss with Parmesan cream.
� Fold in the smoked salmon and season to taste.
� Plate up the pasta, scatter the pancetta on top and finish with sprinkling of pepper.
