why is it not law in uk that you have to use coloured chopping boards in kitchens?

The Food Standards Act 1999 will also be used in a prosecution if deemed necessary if food production premises also allow other situations to occur that lead to contamination, including inapprproate food storage, food contact materials and the like. United Biscuits have just recalled a stack of the Go Ahead! products as there are some with strips of wire baked in them - ooops . . .! - under this Act.
The use of colour coded boards as defined in the relevant Guides is designed to avoid the use of the same prepararion surface for cooked and un-cooked produce.

I understand there are different coloured boards
red = raw meat
yellow = cooked food
blue = raw fish
green = fruit and veg
brown = root veg
white = bread / dairy
Apparantly gorden ramsey only uses white boards in his kitchen i was wondering if he was breaking any laws i understand his kitchen is spotless but no matter how you wash a board after using it for raw meat prior to cooked i think there is a chance of cross contamination.
