does anyone have a receipte for Baileys Cake?

Baileys Cheesecake
Take about 8-10 digestive bix. Put in a small plastic bag holding the top and bash the rest to crumbs with rolling pin. (good for anger). Gently melt 4oz butter then mix them together and push them into the bottom of a 12inch quiche tin or flan case.
Then about 14oz Philadelphia or supermarket version beaten smooth in a bowl and set aside. 2 egg whites whipped until they make stiff peaks when you turn the whisk upside down. Also set aside
1/2 pint of double beaten till thick - set aside.
optional juice and zest of lemon - set aside.
Now mix Philadelphia, lemon, 4oz caster sugar, and a healthy cup of Baileys. Dissolve 1 sachet gelatine following instructions on the packet (or if you are a veggie use Agar) and add this to the mix.
Now fold (not beat or you lose the air whisked in) the cream and the eggwhites. and put the whole mix on top of the base in the top of the fridge for at least 3 hours. If not using lemon garnish it with grated choc or if you are just a sprig of mint or a few coffee beans looks good. Totally yummy and has at least a million calories!
