I have a lamb shank, that I'd like to cook for my dinner tomorrow - how do I cook it?

Olive oil in a oven proof pot and brown the shanks. Then throw in some shallots start gently frying them off, add some garlic and then put the shanks back in the pot, add some stock, honey, salt, pepper and put in ove n on 200 for about 25 mins. Then turn down to 160 and cook for approx 2 and half hours. Check it a few times and turn over the shanks. When the shanks are cooked take them out of the pot and place in foil and put back into the oven. With the stock and onions left over, make a gravy. Either reduce on the top of the cooker or add some flour and stir all the lumps out. It will be superb.
