The clue is 'castle on the crag', a castle on a granite hilltop in the centre of a city

I thought this would be Edinburgh or Stirling but they seem to be built on basalt, not granite so don't think they can be right.
any ideas?

Aberdeen is the granite city isn't it?
I do think this is probably Edinburgh Castle as I have read reference to it as "Edinburgh Castle perched on the famous granite outcrop".
Edinbugh Castle is known as the castle on the crag.
