Crete north coast, lively, south to chill, west to catch up on the meaning of life.....and the east - remote and few options to stay.
West Cyprus - Polis for example, , on the north coast, or Paphos on the south would be nice. Into Eco friendly holidays? Use the agrotourism facility here:
http://www.agrotourism.com.cy/ Gets you into the real country...
one tip - if you rent a car for a bit of roaming about, like to the Akamas Peneinsular - views, walking, beaches - or Lara Bay for the turtle hatchery, scenery and isolatedbeaches, make sure you upgrade and get a 4x4 - its more than woth the extra. The state of some of the off track roads is incredible, and part of the fun on holiday is to watch the hired little cars trying to negotiate the tracks in the Cedar Valley - well, we enjoyed it anyway......
Also, couple of the smaller Greek Islands might do - the Sporades Group might be the ones - Skiathos is quite commercialised, but certainly has all the beaches you'll ever need, including some like 'Xerxes' or 'Mandraki' that few visitors get to....worth a quick web search for further info..
Tarifa on the furtherst south tip of Spain (link here for info:
http://www.andalucia.com/tarifa/home.htm ) is a mecca for windsurfers, kite surfers and the like - good atmosphere in the town, nice older parts and chilled attitude to everything there - and good beaches too....easy to get to without going as a package - fly to Mallaga, car to Tarifa - excursions into the pueblo blancos - little white washed villages - in the hills will break the stay, or for another town get to - trip round the Costa de la Luz for a couple of overnight stays? You don't need to be in one place all the time...
Also get to Gibraltar for an egg and chips lunch (classy..
