roast pork leftover

Any idea what to do with lots of leftover pork roast. We often have the left over roast (whatever joint of meat it may be each week) with chips or salad on a Monday but....I am so bored of that option and wanna do something zanier.

Why not try a curry or stirfry. If you cut the pork into thin strips and stirfry it with a load of veg and noodles it's really tasty. I usually end up doing that on a Monday night with what ever roast we have on Sunday. My lot really like Blue Dragons Hoi sin and garlic stir fry sauce.

last time i made a creamy white wine & leak sauce and put the pork in that and added some apple slices. I t was really nice, served with rice.

Mince the roast pork, add finely diced onion, carrot, courgette. Good clug of tomato puree and some beef stock to moisten. Chuck in a casserole dish, cover with mashed potato (add some lightly fried leeks for a change - or some grated cheese) and bake until brown and crispy. Voila!! Shepherds pie.
