BBC Good Food mag April 2007- carrot cake.

Please can anyone help me with this recipe? I must ahve thrown it out by mistake. This carrot cake was made in a loaf tin and is totally delicious.

Hi not sure if you got it or not from indianwells but mum sent it to me so here it is anyway!
85gr sultanas, 85 gr wholemeal flour, 85gr s. raising four, 175gr light brown sugar, 1tsp sugar, cinnamon, mixed spice, 1/2 salt, juice 1 orange, 125ml sunflower oil, 2 eggs, 175gr grated carrot, 50gr chopped walnuts, extra to decorate.
FOR THE FROSTING
85gr soft cheese, 25gr butter, 1tsp vanilla extract, 175gr icing sugar
METHOD
Soak the sultanas in orange juice overnight or for 4 hours. Heat oven to 160c/gas4. Grease a 900g loaf tin(2 lb] line with greaseproof paper.
Mix all the dry ingredients in bowl then add oil and beaten eggs, mix well thenadd carrot, walnuts sultanas & remaining orange juice.
Put into tin, smooth the top and bake for about 1hr. Cool in tin for 10 mins then turn ionto wire rack to cool.
Frosting; Beat butter, cheese, V. extract till smooth, then add sifted icing ugar and leave to chill till needed
When cake is cool, split in half, spread with the icing, then add the top.Finish with the rest of icing & decorate with walnut.
