I don't think there's v much difference in the time of year you travel except xmas obviously. Spring is nice it can be hot or cool though, winter is v cold and summer can be v hot. I can recommend the Holiday Inns in NY ,or the Lexington, as for flights they don't vary that much just have a good look round. You will love it ,there is nowhere on earth like it, enjoy!!
there's not really an off season but airlines sometimes do special promotions; BA had one about a month ago. Zoom are currently offering cheap flights from Gatwick.

Try expedia.co.uk, its where we booked our break through last year and got a very good deal!

We went in the second week of March and for some reason it was only 500 compared to 700 the week before or after, so if you are flexible with your dates, experiment with putting in different dates and see what comes up
The first few few weeks of January are usally cheap if you want a deal on a flight. But it will be cold.
Avoid the times the children are out of school, spring break which is typically in March or sometimes the week after Easter depending on which school you are in, the summer (it's too hot anyway) and the two weeks around Christmas when they are on break. Families travel a lot during these times and the air and hotel rates go up. NYC is expensive any time but those are worst. Spring and fall are nice.
