Why does it always seem well ready way before the recommended roasting time?
I use a circotherm oven but take 20 degrees C off the recommended heat.

If you raise the temperature of your circotherm oven by 20 degrees C you will achieve the perfectly roast chicken.

Hope this helps.

thanks whiffey do you use foil? On the chicken, I mean.
meredith I've never roast a chicken so I have no need for foil. I cook chopped chicken in butter ghee with burned onions and garlic. If I want it roast I get Tescos to do it for me. All that washing up ? I think people who do huge Sunday roasts need sectioning.

I love spit roasting.
spit roasting, are you sure your in the right section.?
Most ovens cook at slightly different temperatures, basically all cooking times are meant as a guidline. The chicken is cooked through when a skewer inserted into the thickest part of the leg runs with clear juices rather than any hint of red in them. Hope this helps
