What is a Welsh cheesecake and what is the recipe?

A normal cheesecake recipe but using a soft Welsh cheese.

There must be loads of recipes, but this is the one I use.

  1. 4oz shortcrust pastry
  2. 3oz sugar
  3. 3oz butter
  4. 3oz flour

jam and milk.

Cream sugar & butter. Add flour and beaten egg a little at a time till blended. Cut pastry into circles and put into greased patty tins. Place a little jam in each pastry case, and fill two-thirds with sponge mixture. Cook for about 20 mins in a hottish oven until golden brown and well risen.

Cetti -- your recipe does not seem to have, er, cheese in it.  Was that right?

 

My mum made a cooked cheesecake once which was delicious, but seemed different somehow.  It took us ages to notice the curd cheese sitting untouched on the side.

Yes NF it is right - hasn't civilisation reached the Forest yet  :-D

For some inexplicable reason the original British cheesecake was cheeseless! They are just light, golden tarts  which go back centuries. The one I've given has been in my family for many years - like most recipes it's just handed down.

 There are Welsh Cakes, but they are different again - more like scones cooked on a griddle - eaten hot dripping in butter and syrup.

Cooked cheesecake is American and contains Cottage or Curd cheese - and there are a million recipes for each one.

My mum's recipe was I think from Austria -- I'd always assumed that the American ones were taken there from such parts of Europe.

 

Perhaps your cheeseless type is so called because it is cheese shaped rather than flavoured?  "Cheese" was often used to describe anything broad and cylindrical.
