Lemon curd not thickening

Help . Just making a batch of lemon curd, it's at the stage where it should thicken and coat the back of a spoon ( over hot water) and it's just not happening . Can I salvage it or is it a case of starting again .I have obviously got an amount wrong somewhere...thanks for any advice..

For more on marking an answer as the "Best Answer", please visit our FAQ.If you have a microwave try cooking it in there one minute at a time perhaps I haven't made any lately but I used to make it regularly for a local market and although I rarely use my microwave for anything other than re heating or defrosting I found it a much quicker and easier way for this I think I used to cook it for 4-5 minutes but as yours is part cooked already try the above before discarding. If it wont thicken why not use it as a sauce for a pudding or ice cream? good luck
