Anything by Delia Smith should hit the mark I also like Nigella's how to be a kitchen goddess

The Good Housekeeping "Cookery Encyclopedia" published by Octopus, is an excellent tome full of recipes and infomation.

I find that Larouses "Gastronomique" although an excellent book, is more for the professional cook.

Gary Rhodes - New British Classics, got this for my Canadian cousin, she loved it,

I have the Good Housekeeping encyclopedia and it is very good but lacking in as many recipes as its counterparts.

May the gods of all things culinary forgive me for what I am about to suggest...

The earlier Deliah books are quintessentially British and a good idea for introducing someone to British cuisine.

I feel sick and dirty now.  Like I've just sold my soul.  Forive me Hugh, Nigella, Rick - I only meant well.

Please also bear in mind that an Amercian fluid ounce, pint etc is different from the UK equivalent.  When I buy books from the states as gifts I always include a printed sheet of US-UK conversion info if it is not specifically included in the book to save confusion.

The Good Housekeeping cook book is like a cookery bible!. for more traditional foods I'd give Brian Turners 'Favourite British Recipes' a go.  :)
