For more on marking an answer as the "Best Answer", please visit our FAQ.not sure what OS your on but in windows, you can set iTunes to minimize to system tray, which to the untrained eye may seem like it's closing. You can turn this off by unchecking the above option in iTunes->Edit->Preferences->Advanced.
If it really is closing, I'm sorry I insulted you and would advise that the problem could be to do with malware or window management applications, thats all I can think of unless your explorer is really screwed up or theres a windows bug which can make this sorta thing happen, google it.
