A banger can be a: A sausage, usually pork and of a lower quality, with a tendency to split open with a "bang" during frying. See also bangers and mash
Yes I would say the skin split would not make a bang but more the grease and juice inside coming out and when in contact with the extreme heat and oil in the pan 'bang'
