How do you eat these? When are they ripe? What else can you do with them?

For more on marking an answer as the "Best Answer", please visit our FAQ.Yes, you can pull away the yellow flesh and get out the red seeds - they're really good. They are ripe when the outer skin is hard and starting to crack.
Aside from just eating the seeds, you can:
- sprinkle them over cooked chicken
- sprinkle on salads
- sprinkle over ice cream!!!!
- juice them, and drink the juice or use it in sauces.
- I've never tried it, but I am guessing you could use them in fresh (not cooked) salsas
They don't stand up well to being cooked.
I like to just "crack" them open with my hands. I find that when you use a knife, all the juices come out. If you have a grocery near you that sells Persian or imported foods, you will find bottled pomegranite juice. They make awesome martinis. There is also a Persian recipe that you can try that uses the bottled pomegranite juice with chicken and other herbs/spices. I have had it and it's very good!
