The Dornier 27 is a third party add-on for FSX, it doesn't come as standard which is why it has all the pop-up panels and such like and a different looking checklist. You'll have to buy or download the add-on from somewhere.

As for crash effects, it's another program that you'll have to download from somewhere, it's not something that comes as standard with FSX. Try looking on http://www.avsim.com or http://www.flyawaysimulation.com
