chicken
hi all i was planning on making something with chicken for valentines day but i have no idea what to do can any1 help please. as long as it dont include mushrooms or onions. thanx

1 good size boneless chicken breast per person (I always throw in one extra)
Cream cheese
Frozen Spinach (whole leaf is best)
Sea Salt
Pepper
Red pepper
Using a rolling pin, roll out the chicken breasts (thoroughly thawed) until about 1/4 to 1/2 inch thick. (Placing them between two pieces of plastic wrap or waxed paper will help)
Fill with about 1/2 cup cream cheese that's been mixed with as much of the thawed spinach as you'd like
Salt and pepper to taste, adding just a dash of red pepper for color. Pin together with tooth picks.
Bake in a 350 degree (F) (You do the conversion) oven for about 45 minutes. I always use a meat thermometer... it shoud be about 165 degrees F. Remove, cover with aluminum (Oh, ok, aluminium) foil for about 10 minutes to rest. Serve with your favorite vegetables...
(Line the baking dish with foil to save on clean-up...)

Sorry, you've probably been shopping by now. Summer-in-Winter chicken (bbcgoodfood.com). Chicken with cherry tomatoes, creme fraiche and pesto. Served with rice and salad or new potaoes and veg. Did it recently for a girly dinner party and everyone loved it (well they said they did) and I'm doing it for my OH tonight. Hope you have a lovely evening whatever you decide to cook!
