Can you make them?
I think I might just be the worst omlette maker there ever was. I get so embarressed sending out a meal that looks complete sh!te.
I have been practising to make them for ages, but they still come out rubbish and I have to spend ages scrubbing the pan before my Nanna see's the mess I made!!
Soo annoying! Grrr!!

My Nanna has proper omlette pan's so I guess they should come out good, but they don't.
Err OK, I beat the eggs. Tip them in, leave it a few second's. Push round with a wooden thingy, scrape into the middle will tipping the opposite side up. When all the runny bit's have gone I put the filling in then fold over each side and try to make it look edible once on the plate. Which is harder than it sounds.
This prob sound's really bad, I'm not very good at explaining things.

I make mine the same as Jackthehat and they always come out fine, they even rise quite a bit for some reason and we get a really nice thick eggy flavour with bubbling cheese on top. The trick is to keep it to a medium heat, do as Jack says with lifting the cooked egdes with a spatula and tilting the pan a bit to get the uncooked stuff to run into the gaps around the egdes. No need to flip the omelette as the top will finish cooking under the grill - Good Luck with your future omelettes!

I make them in a totally different way though - I put a little oil in a pan, heat it up gently, pour in two beaten eggs and just leave on a gentle heat until the eggs start to set (I don't stir the egg mix). With a very thin wooden spatula, I push the edges of the omelette down into the main body, then raise the pan up at an angle so that any uncooked egg pours down around the sides. Then I slide the spatula down the sides and underneath to loosen the omelette from the pan. I usually pop it under a preheated grill then to finish off the top or just flip the omelette over to cook the other side. The secrets seem to be to have the pan well oiled first, not to have the heat too high and also use a really thin spatula.

Sorry, I logged off earlier.
I beat three eggs with a bit of salt and pepper. I make sure the oil is hot enough then pour the mixture in and swirl it round a bit to mix it. then I leave it for about a minute then check with a fork to see if the edge comes away from the sides. Then I take a flat wooden spatula and fold from the side inwards twice. Then I turn it over so that the edging is underneath for a bit. Then slide it onto the plate.
I've been cooking them for years so I can't remember how long it took me. It comes with experience I guess.
