best cheese for stuffing chicken

Anyone recommend a good smoked cheese to put inside chicken.  i am then going to wrap bacon round the chicken so just something to go hand in hand with it

Applewood smoked is a good tasting cheese and you can now get fancy bacon like maple flavoured smoked bacon which is scrummy - they would definitely compliment each other with contrasting smokey niceness and the sweet tasting smokiness of maple bacon - oh I think I'll need to go out and buy some it's made me hungry thinking of it

I recently tried a normal strong blue cheese stuffed into a chicken breast - it was beautiful!!

Just remember to wrap the bacon very tightly round the chicken...it stops it struggling when you pluck it.
