In recent times I have been having problems shelling hard boiled eggs. I don't seem to remember this problem years ago. Now when shelling, the membrane sticks to the surface of the egg rather than the shell, and consequently it is very difficult to shell and more often than not results in part of the white coming away with the shell. Any ideas for foolproof shelling? As I'm just into the 'pickling eggs' season, all suggestions gratefully received.
when finished boiling run under cold tap and peel at same time the shell seems to come off easier when still hot, oh and roll the egg to crack the shell.
I was told that this happens more when the eggs aren't as fresh as they could be.
I've experimented with this once and i have to say I agree with it, if you boil the eggs as soon as you get them they seem to peel easily, whereas if you leave them for a while they tend to come away with the shell!
I have this off to a tee; strain the boiling water off the cooked eggs and fill pan with cold water, leave for 1 minute (gives them time to cool) then gently crack the shell all over, put them back into the pan with more cold water and you can peel them when you want.
