Here's a recipe for gluten free white sodabread (which uses rice flour and tapioca flour instead of wheatflour) and is probably quicker to make than a yeasted bread if you are short on time:-

For the main meal, just substitute any wheat flour with rice or gram flour. I'd be tempted to buy a small bag of Doves Farm gluten free flour and use that instead for everybody's food not just the wheat intolerant guest.
For something a bit different for the main meal (and is quite nice served up at room temperature, after being cooked) is ratatouille, which you could serve up with rice or some of the yeast bread made above into little rolls. Ratatouille is very easy to make, just hunt your vegetables down (onions, courgettes, aubergine, sweet peppers & garlic, chop em up, saut� in oil and a few spices, add tomatoes and herbs and let it talk to itself for a little while.
Another easy recipe would be stuffed peppers (parboiled sweet peppers stuffed with cooked rice, onions, mushrooms and other finely chopped veg, flavourings etc), topped with some smoked Applewood cheese and heated up in the oven. (suitable for everyone who likes veg and cheese !)
