Why not fly? It will be a LOT cheaper than any cruise.

But I'd do some research on visas first - it's not that easy for a US citizen to spend 'a few years' in Europe.

Some of the freighters will take the odd passenger, quite legitimately - have a look at which shipping lines serve the Norfolk-Iceland route, as well as perhaps other Eastern Seaboard ports. Eimskip will be one of them - look up their US contact details and ask. However, even this approach will likely be more expensive than flying. If you are a US citizen then you will be able to enter most/all European countries for up to three months without a visa. In some of these you will be able to extend your stay by applying, but all such leaves to enter will strictly exclude permission to seek employment.
The US naval base is closed. You will not be able to hide in a small society, but the advantage is that you are highly likely to be treated as a person rather than just a face in the crowd. Maybe that would not suit you, but I have met very few people who have not spoken highly of their experience visiting Iceland. The exceptions are those (two people, from memory) who should not have gone there: they are of the beer, beach and sun brigade ("nothing else is a holiday"). Why did they go ? They got the trip for free.
