It depends what you're looking for, I mean Oxford is obviously really touristy with the Uni's, museums, buildings, and er..... I think that's it but at Xmas time I'm not sure if they'd be open.
Personally, if I had the opportunity, what I'd do would be go way out into the country (I'd go into deep Dorset) and spend a few days in an old cottage with a log fire and enjoy the scenery. And the sheep smells.
It depends on what you like - at that time of year, a good pub in the Cotswolds or the Peak District with an open fire, real ale and good food would do me fine! The Waltzing Weasel or the Monsal Head Hotel in the Peak District are favourites of mine.
However, you might want to actually see something other than scenary. The old Roman towns (eg Bath, Chester, York) have a lot of sights, but check opening times.
You might also have some difficultly getting bookings - Expedia.com or similar might be a starting point. The good pub guide rates on accomadation as well.
