Further to the fab ideas on here for roasties I'm looking for more inventive ways to use potato in meals as t'other half is on a back to basics diet and potatoes are the only real carbs we're getting at the mo.
He's meant to avoid wheat and dairy.
Any yummy potato ideas welcome :)

Potato wedges - just cut up the potatoes, light dash of olive oil and any other flavourings you fancy (chilli powder, garlic, herbs, salt and pepper etc) then stick in the oven.
Roast little new/salad potatoes in their skins with garlic and rosemary (lovely tossed hot into a salad).
Boulangerie Potatoes - thinly slice potatoes, put in oven-proof dish, pour in a little veg or chicken stock (leaving top layer peeping out) and bake till golden.
Potato rosti - (grated fried potato) - just google for recipes
Mash with other root veg, such as sweet potatoes, parsnips, swede etc.
Also try different varieties. Sainsburys do Mayan Gold -bright yellow - make really crunchy fluffy roasties!

our favourite is potatoes dauphinois. bit like the boulangerie ones, but with a mixture of milk and cream instead of stock, and lots of garlic. i used to make it with semi skimmed milk and no cream as a less fattening version and it's still nice.
and hedgehog potatoes always go down well - leaving the skins on slice your potatoes almost but not quite through, put in a dish with olive oil and salt, and roast.

Microwave large potato until they 'slightly give' when squeezed (not too sqidgy!)
Using a sharp knife, slice the potato almost through, each cut about 1cm from next cut.
Brush each slit and top of potato with olive oil and then sprinkle on cayenne pepper (or other preferred spice or herb).
Place on a baking tray and bake in the oven until crispy.
A tasty way to jazz up a jacket spud!
