I have no idea how cats' minds work. I have 2 of the devils. One (Cuddles) will eat whatever she catches but she only hunts mice. She will also eat whatever the other one (ASBO) catches as long as it is mice. She won't eat any old cat food and requires a particular brand - as long as it is fish in gravy served at an ambient temperature of exactly 16 degrees.
ASBO on the other hand will kill anything that moves - spiders, flies, my feet whilst in bed, partridges, budgies, garden birds, butterflies, bees, mice, moles, rabbits, mice, rats, shrews, (you getting the picture?) but refuses to eat it (apart from spiders, and that is just freaky having a cat jump on your lap with a spider leg hanging out of his gob) but will eat anything that a) comes out of a cat food packet and b) comes out of the oven.
So I think you can safely say that cat tastes are as varied as humans but we are less likely to be able to work them out.
