Freesat has a handful of channels, and freesat from sky has over 300 free channels.
Do you have a sky+ box or a normal box.
If you have a normal box, then you can't do it. If you have a sky+ box then you can.
only other way is to get 2 freesat from sky boxes (your one plus another one) and hook that up to a 2nd feed from the LNB and put it through a DVD recorder

Not necessarily Ethel, for years I had a anologue TV and VCR, and a DVD recorder and I could record one programme and watch another.
Isn't it a matter of recording one through the Sky box (digital) and watching the other through the aerial (analogue), or vice-versa? Doesn't it depend on how it is connected and tuned in?
Since you are the expert on such things, could you tell me why I could do this? Is it because I did not have freeview?

Yes, but bolton only has freeview through the sky dish - he doesn't have analogue.
If you have one analogue and one digital signal then yes, you can record one and view the other.
But if you only have one digital signal and do not have a digital recorder with its own tuner, you can only record the channel you are watching.
