I stand to look a right eejit here, madbanana, but isn't it one of the popular myths of someone NOT saying something in a TV series and then it being attributed to that character?

The only version of that statement I have ever heard is in Star Trekkin' by The Firm. That is Spock's line in the song, but Spock almost never called Kirk "Jim" in Star Trek, at least until one of the later movies (possibly Star Trek 2: The Wrath Of Khan - just before he dies).
don't know about Spock, but toward the end of "The Naked Time" (series one), with the warp engines offline and cold and the captain calling for full power, Scotty did say "ah cannae change the laws of physics".
I don't know the answer. My first thought was that it could be the race of "rock" creatures, the one's that McCoy fixes up with cement, but I don't know the episode name.

That said, on IMDb there is a dedicated star trek board and I have asked on there.
Postdog, the Horta (rock creature) appeared in "Devil in the Dark".
I cannot remember a Star Trek episode but it did appear in a book by W.Shatner called Captain's Glory

The thing that was never said was "Beam me up scotty"
OK, I got an answer. Apparently it was Star Trek the motion picture, made in 1979. I thought it was earlier because the line was used in the firms, star trekkin, but this was after that, which surprised me (thought it was earlier!)

and it was said by Spock
