I have just bought a piece of fresh parmesan cheese. How should I be storing it to keep it from going dry?

For more on marking an answer as the "Best Answer", please visit our FAQ.I usually grate my parmesan blocks in my food processor (I buy a large block every month) and store it in my freezer in a tupperware box. If you don't wish to freeze it, then wrap it in some cling film but make sure you use it asap. I've not tried cling film and foil (as Abbie suggests) but that has to be worth a go !
