I cut off the fins using kitchen scissors
Turn the fish dark (bottom) side up and make a little slit across the tail. Then I dip my fingers in salt (to help with grippping) and work them under the skin to get a good grip. Then just pull the skin off towards the head.
Repeat on the other side
The old recipe books remove the top skin only if grilling or frying as the softer, white skin is actually quite nice to eat. However, I`ve tried grilling ( about 5-6 mins per side, hot grill) & frying (5-6 mins medium heat in oil) Dover Sole & found even the dark skin crispy & tasty. Bon appetite!
Make sure to choose a knife with a long, flexible, sharp blade - the sharper the better.
